Cape Cod Hospital
Cape Cod Hospital in Hyannis, MA, recently became infected with a grease epidemic. The kitchen was producing prodigious amounts of FOG's (Fat, Oils, and Grease). Their sewer lines were becoming increasingly difficult to keep clear. To add insult to injury, the Barnstable Sewer Department enacted a Wastewater Ordinance. Any institutions with food preparation facilities were subject to fines and surcharges if they did not meet a certain standard.

Enter Big Dipper®. According to Don Eldridge, the Chief of Plumbing for the hospital, there was only one feasible route to take. "The engineering company we work with informed us about the Big Dipper® line and gave us a recommendation." In early 1997, a Big Dipper® W-300-AST was installed into their kitchen under the pot-washing sink. Within several weeks, a noticeable change had taken place. Grease was no longer causing problems. Almost all of the effluent grease & oils were being removed at the source. The sewer authority was no longer keeping an eye on the hospital, as well. They had come into full compliance with the ordinance. As for the unit itself, Don states that they could not be more satisfied with its operation. Well, he has noticed only one major problem with the unit. According to Don, "the machine is just too clean." It has functioned with utmost efficiency, and only routine maintenance is required. "The Sewer Department is pleased with it, we're pleased with it; the Big Dipper® has cured a lot of headaches for us. It has solved our kitchen effluent problems."
